Grilled Mushroom Sandwich

Butter Mushroom – 1 Cup.
Garlic (Finally Chopped) – 2 Pods.
Olive Oil – ¼ Cup.
Italian Seasoning – 1 Tbsp.
Balsamic Vinegar – 1 Tbsp.
Black Pepper – ¼ Tsp.
Spinach Leaves – 1 Hand Full.
Small Onion (Sliced) – 1.
Bread – 2 Sliced.
Cheese – 1 Sliced.
Mayonnaise – 1 Tbsp.
Salt – To Taste.

Remove the Stem from the Mushroom.
Marinade the Mushroom Caps with Olive Oil, Vinegar, Salt, Black Pepper, Garlic and Italian Seasoning for 15 Min.
Drain the Mushroom Caps and Grill it with Little Olive Oil in a Grilling Pan or Tawa and Till Golden Brown on Both Sides.
Toast the Bread Slices and Stack the Sandwich with Mayonnaise, Mushroom, Spinach, Cheese and Onions.

Cauli Egg Roll

Maida                    1/2 Cup
Atta                        1/2 Cup
salt                         to taste
onion                     1
Cauliflower          1Cup
Eggs                      3
salt                        to taste
chilli powder       to taste
garam masala   a pinch

Make dough with maida,atta and salt,water.
Keep it for 20 minutes.
Roll it make chapathis.
Put oil in a kadai,add onion,cauliflower chopped.Fry well,add chilli powder,salt.Mix well
Add eggs,fry well.finally add garam masala powder.
Place this filling in chappati and roll it.Serve with tomato sauce.

Green Rice

1 C Rice
1 bunch coriander leaves
1 handful of mint leaves
2 green chilies
1 onion chopped
1 tsp ginger garlic paste
2 cloves
1" cinnamon stick
2 tbsp ghee
2 C water
lemon juice of 1/2 lime
salt


Grind coriander,mint,ginger garlic paste,green chillies,onion.   
heat ghee,add clove and cinnamon stick ,add ground masala fry well.
Add washed rice and fry for 2 minutes.
add salt,lemon juice,water.Cook till done.

Pancakes


60 g maida
1egg
1/4 cup milk
1/4 cup water
1/4 tsp salt
2-3 tbsp sugar
oil or butter

Mix everything well.Put
Heat pan add butter pour this batter,cover for 10 seconds then uncover it.
Cook both sides.

Dry fruits idli

1 cup Idli batter
almonds,cashew nuts each 1 tsp
Raisins,dates chopped  each 1 tsp
Cherry 3-4

Mix dry fruits.
Place one cherry in a small cup,pour idli batter and then dry fruits
and then idli batter.Steam it.

mushroom omelette

Do same like african omellete,Instead of minced meat add chopped mushroom

African Omelette

3 eggs
2tsp mutton mince
2tsp olive oil
3 bay leaves
2 tsp onion chopped
1 tsp paprika
1 tsp red chilli paste
salt

Heat oil in tawa,add bay leaf,paprika,red chilli paste,mutton mince and salt.Saute well.
Spread it on the tawa,break 3 eggs on the top.Cook both sides.Serve with baked beans

kuzhipaniyaram (paddu)




Neer Adai

Parboiled rice - 2 cups
Grated coconut - 1/2 cup
Salt - 1 teaspoon
Oil - 4 to 5 teaspoon

Soak the rice in water for about 5 to 6 hours. Drain the excess water and grind to a soft paste.
Add grated coconut and salt and mix well. Add enough water and make a thick batter.
Heat tava and grease with oil. Take a big laddle of this batter and spread it on the tava like dosa.
Pour a teaspoon of oil around the corners. Allow to cook for two to three minutes.
Turn it over and cook other side also.

Tawa Rice

1 1/2 cup cooked basmathi rice
1 onion sliced
3/4 tsp ginger garlic pasre
1 tomato chopped
1 tsp red chilli or to taste
1 tbsp curd
salt to taste
oil 2 tbsp

Heat oil in a kadai,add sliced onion,saute little.
Add ginger garlic paste,saute well.
Add tomato,fry little.Add chilli pdr,salt,curd mix well.
Add cooked basmathi rice.Mix well.Serve hot.
Note:
If you are using other than basmathi rice then soak the rice little ,fry it in little oil and then cook.

Dry fruits milkshake


Raisins,fig,dates,almonds equal quantity
honey to taste
milk 1 cup
Grind everything well...
serve chilled.
note:
This is good with morning breakfast.

Chips Dosa

Ingredients
Dosa batter
Chips(potao or tapiyoka or bananna)
cheese slice

Pour dosa batter into a hot dosa tawa,Cover with a lid.
Toast dosa only one side,Keep it aside.
Pour another dosa on a tava on the top put crushed chips,cheese slice.
Close it with the 1st dosa,Cook well on both sides.
Children will love this.

Dosa batter Vada

Dosa Batter         1/2 Cup
besan                   1 tsp
onion                   1 small chopped
green chilli            2
curry leaves          few
coriander leaves   2 tsp chopped
oil for frying

Mix everything except oil.
Heat oil,pour one spoon of batter into the hot oil.
Fry till golden brown.Serve with tomato sauce.

Thalicha kozhukattai (rice balls)

Boiled rice         1 Cup
salt                    1 tsp
oil                      2 tsp
mustard seeds    1tsp
curry leaves        few
urad dal             2tsp
asofoetida          1/4 tsp
red chilli             5-6
green chilli          2-3 chopped

water                  2 cups
Soak rice for 2 hours.grind it very nicely.(grind the rice with 2 cups of water)
Put oil in a kadai ,make seasoning with mustard,curry leaves,red chilli,green chilli, asofoetida.
Add rice batter into the seasoning,add salt. Mix well.heat the kadai in medium heat,mix well
till you get a thick dough consistancy.Cool it.
Make balls,steam it in a idli steamer.
note:
can add chopped or grated coconut.


Kozhukkattai 1 (pundi)

 Boiled rice       1 cup
Coconut           1 cup grated
salt                   1 tsp nearly
jeera                 1 tsp

Soak rice for 15 minutes.Drain the water.
Spread the rice on a kitchen towel.
Powder rice coursly with jeera and salt.
Add grated coconut,mix well.Make balls.
Boil water nearly (2liter),When it bubbling, add rice balls.
Allow it to cook.it will take 10 to 15 minutes to cook.
note:
make the balls very tight otherwise it will melt while boiling.



Fried Chapathi

Chapathi      2-3
Egg              2-3
salt               to taste
Chilli pdr      to taste
oil

Beat egg ,add chiili pdr,salt .Mix well.
Cut chapathi into triangles or diamonds.
Heat oil in a kadai,Dip chapathi pieces in egg,fry it in oil.
note:
It's good for evening tiffin.Good after school tiffin.
You can use your leftover chapathi.
Serve with tomato-ketchup

Semia briyani

Follow the noodles briyani recipe...
Instead of noodles add fried semia (vermicelli)
Another variations:
1.broken wheat with chicken or(vegetable)
2.Rava with chicken or vegetable.
3.Idiyappam with chicken or vegetable.

Noodles briyani(using maggi noodles)

Maggi masala noodles     1 pkt
vegetables                       1/2 C
mint,coriander leaves       1 tbsp each
ginger garlic paste            1/2 tsp
onion                               1 chopped
tomato                             1 chopped

Put oil in a kadai,add spice,ginger garlic paste,onion saute well.
Add tomato saute well.Add little salt,chilli powder,mint,coriander leaves.
saute well till it become a sauce.Add water,maggi masala,garam masala..bring it to boil.
Add noodles cook till dry. Serve hot.
note:
Can do the same with chicken...

kalyana Kichadi

rawa n toodal                 1 C each
onion                              1 chopped
tomato                            1 chopped
chilli powder
salt
turmeric
oil
ghee
green chilli
curry leaves

Fry rawa,cook took dal with turmeric.Keep it aside
put oil in a kadai,make seasoning with mustard,green chilli,curry leaves.
Add onion saute well.,add tomato,chilli powder,salt,fry well.
Add 2 cups of water,bring it to boil,Sprinkle rawa,cook it.
Add cooked and mashed dal.mix well.Pour ghee on top,mix well.
Serve hot with raita.

Macroni in creamy mushroom sauce

Macroni pasta 1 cup boiled
mushroom 10
maida 1tsp
butter 1 tbsp
basil dried little
rosemary little
salt to taste
milk 10 tsp
Cook mushroom in water,grind it.
Put 1tsp butter in a pan,add maida,fry well.Add milk and cook till thick.
Add mushroom paste,salt,basil,rosemary,cooked pasta.Mix well.
Add remaining butter and mix well.
