Microwave cake(pudding)

Maida,cocoa powder,butter      3 tbsp each
sugar                                        4 tbsp
Soda water                              8 small cap full(soda bottle cap)
walnut,almonds                         2tbsp chopped
Mix everything well.Put it in a microwave safe bowl.
Microwave it for 2 minutes 10 seconds.
serve hot

Victoria Sponge Cake

175 g maida
175 g butter
175 g sugar
3 eggs
1 tsp baking powder

Seive baking soda and maida.
Cream butter and sugar.Add eggs Beat well.
Add maida and fold it.Put in a baking tin.
Bake it in preheated oven for 30 -35 minutes.

Homemade Rusks

Cut long buns  ½ " thick slices.

Spread on a baking sheet & bake at 140 deg C for 25 mtes or so, till totally dry & crisp.
Do this in 2 batches.

Pizza muffin(spiced muffin)

Mix together:
Chopped tomatoes & capsicum - 2 tbsp, each
Chopped onions - 2 tbsp
Grated cheese - 4 tbsp
Chilli flakes - ½ tsp
Oregano - 1 tsp
Salt
Tomato ketchup - 2 tbsp
Olive oil - 2 tsp
For the dough:
Maida & wheat flour - 100 gms each
Baking powder - 1 tsp
Cooking soda - ½ tsp
Salt
Olive oil - 2 tbsp
Mix both together adding enough water to get a dough of dropping consistency.
Fill in greased muffin cups & bake in a pre heated oven at 180 C for 12-15 mtes.

Simple vanilla Cake

Maida        1 cup
Sugar         1cup
Butter        1 cup
egg            1
baking pdr 1 tsp
Seive maida and soda.
creambutter and sugar well,add egg beat well.
Fold maida in egg mixture.
Pour it in 6" tin and bake it in preheated oven for 180 degree.
Note:
1 cup sugar is too sweet for me..so I add 1/2 to 3/4 cup only

3 minutes microwave cake


Use only MW safe vessels.

Maida - ½ cup

Sour curds - 2 tbsp

Cooking soda - ¼ tsp

Melted butter - ¼ cup (MW butter on Hi for 1 mte)

Powdered sugar - 1/3 cup

Vanilla essence

Sieve the flour; add cooking soda to curds.

MW Hi ¼ cup of water for 1 mte.

To that add butter & sugar.

Next add flour, curds & vanilla essence & mix to a smooth batter.

Pour into a 4” diameter greased shallw MW bowl.MW HI for 4 mts.

Allow to stand for 3-4 mts.

Eggless oatmeal muffin


Ingredients
Mashed banana - 2 cups
Whole wheat flour - 3/4 cup
All-Purpose flour - 3/4 cup
Old Fashioned oats - 1 cup
Milk - 1 cup
Brown Sugar - 1/2 cup
Applesauce - 1/2 cup
Baking Powder - 2 teaspoons
Baking Soda - 1 teaspoon
Vanilla essence - 1 teaspoon
Salt - 1/2 teaspoon

Directions
Combine the dry ingredients together - the flour,oatmeal, brown sugar, baking soda, baking powder and salt.
In another bowl combine together the milk, applesauce and vanilla essence. You could replace the applesauce with oil. Also combine the mashed bananas.
Finally combine the liquid and dry ingredients and stir until just combined. Over stirring results in hard muffins.
Line the muffin pan with muffin cups. Grease them if needed.
Pour evenly about 3/4th full.
Bake in a preheated oven at 400 F for about 20 to 25 minutes until a toothpick/fork inserted comes out clean.
Cool for about 10 minutes and transfer to a wire rack.

Whole wheat almond cookies


Whole wheat flour - 1 cup
Sugar - 1/2 cup
Salt - 1/4 teaspoon
Sliced almonds - 1/4 cup
Elaichi powder/Cardamom powder - 1/2 teaspoon
Unsalted butter - 1/2 cup or 8 tablespoons
Milk - 2 tablespoons or as needed

Directions


  1. Pre heat the oven to 360 degree F.
  2. In a bowl, mix the flour, sugar, salt, sliced almonds and cardamom powder well.
  3. Next add soft butter and milk to the flour mixture to make dough. Dough should be very soft.
  4. Divide the dough into about 24 equal parts and make them into balls.
  5. Press each ball between your palms lightly; every piece should be about 1/2” in thickness.
  6. Place the dough balls on an ungreased cookie sheet about inch a part.
  7. Bake the cookies for about 18 minutes or until cookies are lightly gold brown.
  8. After they become lightly golden brown remove the cookie sheet from the oven. Let the cookies cool down for two to three minutes before taking them off the cookie sheet.
  9. Enjoy with tea/coffee.

Easy banana bread

Ingredients:

Bowl 1
Butter - 1/2 stick or 5 tablespoons
Eggs - 2
Ripe bananas - 2 or 3
Sugar - 2/3 cups

Bowl 2
Maida/All purpose flour - 11/3 cup
Salt - 3/4 teaspoon
Baking soda - 1/2 teaspoon
Baking powder - 1/4 teaspoon
Cinnamon - 1/2 teaspoon (optional)

Walnuts - 1/2 cup (optional)

Directions
Preheat oven to 350F.

In a bowl combine all ingredients listed under 'Bowl 1' and using a potato masher, or a fork or a spoon mash the bananas well. The banana should be mashed well, but a few chunks here and there should be fine.

In another bowl, combine all the dry ingredients listed under 'Bowl 2.'

Then, combine the wet and dry ingredients together and stir in the chopped walnuts.

Pour the prepared batter into a greased loaf pan and bake until a toothpick inserted comes out clean.


It take 40 minutes for small sized loaf pans and 50 minutes for large loaf pans approximately, depending on ovens.

Remove from the oven and allow the loaves to cool for about 10 minutes before removing it from the pan and slicing the bread.
